Gas This gas unit offers (2) 12” x 12” manually controlled hot plate burners and 48” Plancha surface that offers (4) 12”grooved plancha zones, Beneath the hot plate burners and grooved planchas are (2) 25 ¾ “ x 24 ½” drawer-like, easy to remove grease traps, complete with handles, for quick removal, disposal, replacement, and cleaning. Unlike a standard griddle, a plancha offers all of the functionality of a griddle with the added ability to cook all kinds of foods and to vary the type of cuisine. A plancha allows you to grill, fry, simmer, reheat, keep warm, steam cook, and use the surface as a cooktop to boil water in a pot and use frying pans. Imperial’s plancha four zones work independently to maintain a uniform temperature throughout each of the 4 zones, minimizing heat transfer between zones, thanks to the patented thermal break. This means that you can cook a 650°F zone right next to a 350°F zone, without heat transfer. The plancha is smooth which makes it easy to maintain a high cleanliness standard, which is vital in commercial kitchens. Simply use dishwashing liquid to degrease.
