This unit circulates heated water vapor to control food temperature and applies air heat to personalize food texture. Integrated C-Touch control uses thermistors to raise and lower temperatures in intervals of 1 degree Fahrenheit. HACCP temperature downloads help improve safe cooking results by recording temperatures throughout baking cycles. Simply inserting a USB into the oven port automatically transfers temperature and convection oven operation into a computer. Temperatures and cook times are also programmable into its eight lockable channels. To streamline operation, its water automatically fills up, and it doesn’t have to be plumbed to drains. The Winston CHV5-04UV half-size commercial cook and hold oven features a single compartment that accommodates four full-size sheet pans, eight half-size sheet pans, or eight full-size hotel pans. Each rack has a maximum capacity of 65 pounds to support high-volume loads. Designed for installation on a 30-inch countertop, the unit measures 27.7 inches wide by 34.23 inches deep by 35.7 inches high. Its relatively small stature enables it to be stacked on top of other pieces of equipment. This unit has a durable stainless steel construction to defend against dents and scratches, and users can directly access product with the field-reversible door.
