Beneath its cooking area, a high-capacity welded drip tray catches excess or leftover fat and oil, while a pitched gutter with a 2-inch by 3-inch drain helps streamline removal.

Providing ample room for cooking several foods simultaneously, the Jade JGT-2436 commercial griddle is equipped with a 36-inch-wide by 31-inch-deep cooking space. With a 1-inch-thick polished steel construction, the griddle plate heats slowly yet retains heat for longer periods of time than thinner plates. It also resists warping from consistent heating and reheating. To cater to different cooking methods, one thermostatically controlled burner is built in every 12 inches, and users can adjust burner output as needed. Throughout the unit, stainless steel tubing helps improve even heating, minimizing cold spots, and for accessibility, this unit can be turned on with spark ignition.
