The unit is lifted by legs that adjust from 1.38 inches to 4 inches to support spacing needs and prevent heat damage to the surface on which it sits. Made of corrosion-resistant stainless steel, it's safe to use in humid kitchen environments. Its smooth exterior quickly wipes down, and it has rear and side splash guards to protect nearby surfaces from popping oil. Grease runoff is funneled into the grease trough and removable grease drawer for proper cleanup.

Heated in 12-inch sections to create three cooking zones, the Lang 236T commercial countertop griddle uses natural gas and electronic ignition to light its three 27,000-BTU burners. Each burner is controlled by an Accu-Temp™ snap-action thermostat, which has a temperature range of 200 to 450 degrees Fahrenheit. The 36-inch-wide by 23-inch-deep cooking surface has a 1-inch-thick, polished steel griddle plate with embedded temperature sensors 0.19-inch below the surface to ensure rapid recovery and heat retention.
